Thanks Bill. I know, it seems like a ritual process so the choice of weapons gets ritualised too. I don't know why, but the old Opinel is perfectly suited to shredding peel. Because I still have four jars of last year's making left, I switched from 3Kg of sevilles to 2.5Kg. Otherwise I could end up with a marmalade mountain a few years down the road.
