@notagain: good point, thanks. Courgette = zucchini. A "mediun cougette" would be a 9 inch zucchini. Hope the weights and measures translate - they don't need to be especially precise though the pancake batter needs to be the consistency of double cream - think crèpe, about 10 inches diameter. If you try it, it would be great to know how it goes down. You can tell by the date I was on a pancake roll. The day before was Shrove Tuesday which, in the UK at least, is Pancake Day. I was just trying to extend the annual gourmet treat an extra day by inventing a new recipe.
Interesting! I was about to mention that British pancakes are a lot thinner than American ones, but I see you already mentioned crêpes, which are exactly the equivalent. I can't imagine trying to roll anything in an American pancake! (You'd have to secure it with a toothpick at the very least...)
